Your pressure cooking has successfully reached pressure cooking status once you visually see steam is being released from the relief valve; this is when you start timing your cooking. To release locking handles to move up or down, press the locking button in both sides. To reach pressure level once lid is in locked position, begin on medium high heat and once steam is visually being released from the release valve reduce heat to medium and set your time for desired cooking time.
